I love pumpkin! My favourite dish is a traditional venetian soup called "Risi e Suca".. with its splendid orange colour, smooth texture and this sort of sweetness it has always been my favourite...especially with a lot of freshly grated Parmesan cheese to finish it!
Anyway this last week-end a bright orange large slice of Hokkaido pumpkin inspired me to try something different, so I made a pumpkin sauce for my ricotta tortellini. A very simple sauce made by salting in pan tiny slices of pumpkin in olive oil, then add the cooked tortellini, sprinkle with a generous amount of freshly grated Parmesan cheese, some freshly chopped parsley, and roasted pumpkin seeds... doesn't this looks fabulous?
....and to finish my week-end of "pumpkin madness" I also prepared a simple soup. The picture below (with my omnipresent coffee maker in the back) shows the first step of the soup which was made of a little chopped onions, pumpkin , some celery , salt & pepper.
